Founder and Pitmaster Scott “Scotty” Masters was raised in butcher shops throughout the Newcastle region, from the sawdust-covered floors of his grandfather’s shop to the shop his father, Geoff, managed on the iconic Hunter Street. Meat, smoke, fire, and hard work have always been part of Scotty’s DNA. In fact, his obsession started so young he once got accidentally locked in a cool room at just four years old, but that’s a story best told over brisket.

What began as a hobby in the driveway of Scotty’s Queanbeyan home quickly became a full-scale passion project. After his high-profile sacking from Canberra’s Number 1 breakfast radio show, Scotty bought his first smoker and fell in love with the craft of authentic American BBQ. Countless overnight cooks, pop-ups, markets, and events soon built Smoke Masters BBQ into one of Canberra’s fastest-growing BBQ brands.

In July 2024, Smoke Masters took the leap into full-time operation, opening its first location inside Alpha Fresh in Hume. Demand exploded almost immediately, and within just three months, the business had outgrown the site, leading to the opening of the Kembla Street Fyshwick location in November 2024.

There, the team refined their craft and built a loyal following, smoking more than 11 tonnes of brisket in the first 12 months alone. But once again, the demand for authentic low-and-slow BBQ outpaced the space available.

Now, Smoke Masters BBQ enters its biggest chapter yet.

We use only the highest quality proteins and vegetables, and they are 100% Australian, sourced through our association with Canberra’s Alpha Fresh who have been in the fresh food business since 1952.

New Beginnings

Our new home at Majura Park Shopping Centre, right beside Canberra Airport, has been purpose-built to create a true BBQ destination for Canberra and beyond. At the heart of it all is “Big Geppy”, our massive 1500-gallon smoker and the second-largest reverse smoker in Australia, handcrafted by renowned pit builder Brendan from Boss Hog Smokers.

From perfectly smoked brisket and ribs to unforgettable burgers, wings, and loaded trays, Smoke Masters BBQ is more than a restaurant — it’s an experience built on smoke, fire, meat, beers and community.
